The story of Sky Blue Sky is the story of Chad and Robyn, and their love of the band Wilco.

Chad and Robyn met 20 years ago, and as their relationship grew so did their love for the indie band Wilco. For years they travelled together to different cities across North America to attend Wilco concerts. The concerts gave them a break from the drudgery of their daily lives, feeding their souls with creativity and enjoyment.

In 2009, unhappy with their corporate careers, Chad and Robyn decided to choose a different path. They wanted something that would inspire them, nourishing their love of food, friends and music. Particularly the music of Wilco. After much brainstorming, they realized they could mesh these loves into one great project, and thus Sky Blue Sky was born.

 

With the blessing of Wilco and their management, Chad and Robyn borrowed the name of one of their favourite Wilco albums (their absolute favourite was “Summerteeth”, but that didn’t sound appetizing for a sandwich shop) and started the ball rolling.

The doors at 605 Bloor Street West, in the heart of Koreatown, opened in 2009 with Chad behind the counter and in the kitchen. From the very beginning, Chad has risen early to prepare and bake every loaf of bread served at Sky Blue Sky.

Not knowing whether their crazy love for Wilco and sandwiches would be shared by others, Robyn held on to her day job for a little while longer. When Chad and Robyn realized that others shared their passions, and it was suggested they open a second location in the east of the city, Robyn left the corporate world. The birth of 333 King St. East occurred in Spring 2014, with Robyn at the helm. With a kitchen expansion in 2015, Chad’s bread baking moved to the King Street location and if you rise early enough and happen to take a stroll past the shop, you’ll smell the aroma of freshly baked bread emanating from Sky Blue Sky.

And so, for seven¬†years now, Chad and Robyn (and their son Spencer) have been creating tasty sandwiches on their homemade breads. When you allow music to enter your life, it’s amazing how tasty the results can be.
